Everyone loves to prepare easy and quick meals at home. If you are a seafood lover as I am, you will appreciate this recipe I've formulated by combining my favorite broil recipes utilizing seafood. You will impress your family and friends with the unique taste that results from marinating the shrimp (or other seafood of your choice) before hand. Your dinner guests will keep coming back for more of this delicious main course recipe. This broil recipe can also be changed somewhat to adjust to your own likes and taste buds. Scallops can be used in place of the shrimp for an easy variation. Fresh herbs of your choice can also be substituted for the fresh basil. Marinated Broiled Shrimp 2 pounds peeled and deveined shrimp 1 cup beer or white wine 2 tablespoons chopped basil 2 tablespoons vegetable oil 2 tablespoons worchestershire sauce 2 cloves garlic, minced salt and pepper to taste Combine beer or wine and remaining ingredients in a large shallow dish; add shrimp, stirring gently to coat. Cover and marinate in refrigerator 2 to 3 hours, stirring occasionally. Drain shrimp, discarding marinade. Place shrimp on 14 inch skewers so that shrimp will lie flat. Place skewers on a lightly greased rack of a broiler pan. Broil 5 1/2" from heat 3 minutes; turn and broil an additional 1 to 2 minutes or until shrimp turn pink. Yield: 6 servings. This recipe can be prepared for any occasion and works especially well at dinner parties, as it can be divided into smaller servings and presented on a buffet table. Some perfect side dishes would be angel hair pasta, caesar salad, and scalloped potatoes.
